Semolina Breadsticks


We all know the saying, The most simple things in life are always the best things. Same goes for food. Who doesn't love bread sticks? If you want to bring something to a dinner/party that for sure will be gone before everything else. Put out a little display of semolina bread sticks with some olives, hummus, cheese, maybe some good prosciutto, and you are a star. You can easily make these at home, and keep them in a zip lock bags for weeks. Take some out for a quick appetizer with what ever condiments and anti pastas you have in the fridge. The recipe here is simple, easy and very satisfying when you have a bag full of awesome crispy, crunchy bread sticks.

This recipe is half semolina flour and half bread flour, the semolina just gives it a more rounded rustic flavor. If you can't find semolina flour just use all bread flour. Once the dough is made you can roll the bread sticks before baking in chopped pumpkin seeds, corn meal, black pepper, flax seeds for a nuttier bread stick, sesame seeds, poppy seeds, mustard seeds....... See where we're going with this? Roll them in whatever you want to try. Bread sticks bake at 400 degrees so watch the oven because they can get too dark quickly. This dough is actually a great pizza dough as well, so if you make enough bread sticks and have leftover dough, just shape it into a pizza , top it and bake a pizza!! Don't be afraid to try the simple things like bread sticks and pizza at home. Get everyone involved and you may just have a new family tradition in the kitchen.

Semolina Bread Sticks - makes about 3 dozen

Preheat oven to 400 degrees

1/2 tsp. Dry Yeast

1 1/4 Cups Warm Water

1 Tbsp. Sugar

1 Tbsp. Olive Oil

1 1/2 Cups Bread Flour

1 1/2 Cups Semolia Flour

1 tsp. Sea Salt

1) In a mixing bowl add the yeast, water, sugar, and olive oil and mix together with a fork or whisk until yeast is dissolved, about 30 seconds.

2) Add the bread flour and semolina flour then salt and mix together until a dough forms.

3) Mix dough until smooth. If mixing in a Kitchen Aid Mixer mix until dough comes away from the bowl. Dough will be moist, slightly sticky but firm enough to work with without sticking to everything, if dough needs a little more flour then add and mix in. Your dough should be moist.

4) Cover bowl and let sit for 45 minutes. Dough should double in size.

5) Take dough out of bowl, roll it in a little flour so you can work with it. Place it on your floured work surface. Cut off small pieces and roll them out to about 10 inch sticks, you may not need much flour to roll your bread sticks in. Once you have a bread stick rolled, this is where you would roll it in the seeds, or crushed pepper. Then place on a baking pan lined with parchment paper and a light layer of either flour or semolina flour. Place bread sticks on pan about 3/4 inch apart.

6) Once you have a pan full of bread sticks place in the 400 degree oven and bake between 15 to 20 minutes. If you like them darker and crunchier leave them in a few minutes longer.

7) Remove from oven and let cool for 20 minutes and enjoy!!
